What’s cooking for PM Modi’s US state dinner?

The White House has prepared a special menu for Prime Minister Modi, who is a devout vegetarian.

As India takes the lead in commemorating the International Year of the Millets, the menu features delightful millet-based dishes.

The first course on the state dinner includes marinated millet, grilled corn kernel salad, compressed watermelon and a tangy avocado sauce.

The main course includes stuffed portobello mushrooms and creamy saffron-infused risotto.

Guests will have the option to add fish to their main course.

Upon request, guests would be served sumac-roasted sea bass, lemon-dill yoghurt sauce, crisped Millet cakes and summer squashes.

For dessert, there is rose and cardamom-infused strawberry shortcake.

For bubbly, there is the Stone Tower Chardonnay “Kristi” 2021 wine, PATEL Red Blend 2019 and Domain Carneros Brut Rose.

Chef Nina Curtis, renowned for her expertise in plant-based cuisine, has collaborated with the White House staff to curate this exceptional meal.

The decor of the venue features elements that honour the tradition and cultures of the US and India, including the Indian flag.
